Like most people, I used to drain my pasta in a colander and the pour the sauce over it before eating. But according to Chef and author Andrew Carmellini, that’s the wrong way to do it.
In a video for Chow.com the chef stresseses the importance of saving the boiled, starchy, water that you used to cook the pasta in order to enhance the flavor of the meal.
According to the chef, here’s how to sauce your pasta the right way:
First, remove the cooked pasta from the pot and mix in the sauce in a separate pot.
Add some of the starchy water back on top of the pasta and heat for about a minute, this will enhance the texture and flavor of the pasta.
Next, add some butter, olive oil, and cheese directly into the pot and mix, this will leave a creamy, delicious, flavor.
Lastly, add your herbs and mix.
If you’ve done it all right, as Chef Carmellini says, you’ll have a delicious bowl of pasta. I know what I’m making for dinner tonight…
